Cheese sauce with 1-20 date mark in the walk in cooler. PIC voluntarily discarded-see embargo form. Beef taco meat with 1-7 date mark, basil tomato soup with 2-29 expiration date mark, and turkey gravy with no date mark in the walk in cooler. PIC stated that the taco meat and soup had been frozen and was pulled from the freezer two days prior. PIC provided date marks for both items. PIC stated the the gravy was made the previous day and provided a date mark. Ensure that ready to eat PHF/TCS foods are properly date marked for use within seven days and are disposed of when date mark/expiration date has been surpassed. Corrective Action: Corrected at time of inspection.
