Advised person in charge (PIC) that when serving a HSP (Highly Susceptible Population) only pasteurized eggs must be used, except when baking or hard-boiling. PIC stated the unpasteurized hard-shelled eggs are only used for baking.

A Certified Food Protection Manager (CFPM) is required to be on the premises during all hours of operation. Corrective Action: Correct prior to next routine inspection.

-- In low-temp dishwasher and at 3-compartment sink, the chlorine concentration levels measured less than 50ppm. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. At the time of inspection, the dishwasher was turned off and a "do not use" sign will be placed on it until it can be repaired. Chlorine was added to sanitizer portion of 3-compartment sink and the concentration levels tested within the 50ppm-100ppm range. Corrective Action: Corrected at time of inspection.

-- Deli ham in reach-in refrigerator had a date mark label of 7/3/2024. The person in charge (PIC) stated the ham was removed from the freezer, thawed, and placed in reach-in refrigerator 1 day prior to the inspection. At the time of inspection, requested the date mark of 11/18/24 be added to ham. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1).
