Hands must be washed at any time contamination occurs and when changing tasks. Predefined Comment: Employee properly washed hands at handwash sink at time of inspection. Predefined Comment: Discussed the importance of proper hand washing procedures with the person-in-charge (PIC). Proper handwashing procedure is to rinse hands with warm water, scrub with soap for 10-15 seconds, rinse with warm water, dry with approved drying provision, and turn off in a manner to prevent re-contamination of hands. Entire process should take approximately 20 seconds for full and proper handwashing to prevent spread of pathogens and contamination.

Items out of temp less than 4 hours per PIC and moved to walk-in fridge to cool. Observed walk-in fridge improperly cold holding cooked chicken, cooked potatoes, shredded beef, cooked cauliflower, sweet potatoes, and quinoa 45-48*f degrees. walk-in was able to be adjusted down at time of inspection to cool foods below 41*f degrees. Per PIC walk-in had been struggling but was in temperature from late morning time. Corrective Action: Corrected at time of inspection.

Observed wooden block prep area left side glass fridge holding TCS foods such as liquid egg, milk, raw chicken, turkey sliced, pepper jack cheese, cream cheese, and Manchego cheese between 45-50*f degrees. Pepper jack cheese had been in unit for more than 24 hours per Manager and discarded. Remaining food had been inside unit less than 4 hours was sent to walk-in fridge to cool. Observed walk-in fridge holding quinoa, fingerling potatoes, seasoned chicken, steak, and sausage 48*f near the front of the walk-in door, per Manager walk-in had just been loaded from prep and delivery in the morning. The remainder of the TCS foods inside walk-in fridge were found below 43*f. Corrective Action: Corrected at time of inspection.

Observed the right side cold table on the cooks line with an ambient air temperature of 69*F measured with inspector min/max thermometer. Chef stated that the cooler had just been filled 1 hour prior to inspection. Product included cut lettuce, shredded cheese, sliced tomatoes. With inspector probe thermometer the cut lettuce measured 48*F, shredded cheese measured 49*F, and sliced tomatoes measured 47*F. Chef moved all product from the lower portion of the cooler to the walk-in to be cooled back down to 41*F. Items in the top portion of cooler included sliced tomatoes, blue cheese, shredded cheese, grilled onions, and shredded lettuce. Sliced tomatoes measured 50*F, blue cheese measured 51*F, shredded cheese measured 49*F, and grilled onions measured 48*F. Chef removed to walk-in to cool back down to 41*F. Chef instructed staff to set up ice bath for top portion of cooler to get ready for lunch service.
