Inspector's notes

Two small ladles were stored with clean utensils in the warewashing area; however, both ladles had heavy dried yellow residue and coarse crusted buildup. The PIC attempted to clean the ladles using soap and degreaser during the inspection but was unable to remove the buildup. Such coarse residue creates a porous surface that can harbor microfilms and allow harmful microorganisms to survive on food‑contact surfaces. All food‑contact items must be routinely washed, rinsed, and sanitized to maintain smooth, easily cleanable surfaces. The PIC discarded both ladles and ordered replacements. Corrective Action: Corrected at the time of inspection.
