Observed a mix of cut tomatoes, onions, and jalapenos sitting out on the prep table with an internal temperature range of 58F-60F. Per PIC, vegetables have been sitting out less than 2 hours. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.

Observed cooked pinto beans with an internal temperature range of 55-63F in a large metal pot over 6 inches deep on a rack in walk-in cooler. Per PIC, the beans were cooked, placed in walk-in cooler the day prior to inspection, and had not been removed from walk-in cooler. The beans was embargoed at the time of inspection. Discussed proper cooling with the PIC. Foods must be cooled from 135F-70F in the first 2 hours and from 70F-41F in the next 4 hours for a total of 6 hours. PRIORITY VIOLATION-5-202.13, P: Backflow Prevention, Air Gap-- Observed spray arm at the 3 compartment sink attachment stored several inches below flood line of the sink with no air gap. At time of inspection, the spray arm was hanging below the flood rim. Discussed the importance of an 1 inch air gap should be maintained at all times to prevent contamination that is cause by backflow. Instructed PIC to replace the spring on the spray arm, securing by some other means, or shorten the hose. A re-inspection will be conducted on 9/11/2023 to show that the spray arm can maintain a 1 inch air gap. Correct By: Correct Prior To Reinspection
