Observed deli turkey and chopped brisket cooling in the top of the sandwich make-line unit ranging from 48*F to 51*F using min/max thermometer, verified by person in charge (PIC). Both items were prepared and placed in the unit less than two hours prior to inspection, PIC relocated both items to walk-in to rapid cool. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed sliced deli turkey, sliced gyro meat, and cut lettuce cold holding in the top of the sandwich prep cooler with internal temperatures of 49-54F, probe thermometer, verified by person in charge (PIC). The TCS foods observed to be in the air space above the refrigerated line. PIC placed the TCS foods into the walk-in cooler to rapidly cool to 41F or less. PIC will retrain employees to stock food below the fill line of the cooler and to monitor food temperatures. Discussed the importance of maintaining cold food at 41F or less to limit pathogen growth and avoid causing foodborne illness. Except during preparation, cooking, cooling, or when time is used as a control all TCS food must be maintained at 41°F or less. Corrective Action: Corrected at time of inspection.
