Observed cardboard lining on prep table where fryer baskets were hanging, near fryers. Advised person in charge (PIC) that even non-food contact surfaces shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material. PIC stated they will remove the cardboard. Corrective Action: Correct prior to next routine inspection.

PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. ----- Sliced cheese, cut lettuce and sandwich meats; roast beef, ham, turkey, gyro meat all observed with an internal temperature range between 48-51*F while being cold held at the make-line unit. Thermometers were calibrated at time of inspection. Per PIC, all products mentioned above came from walk-in cooler roughly an hour prior to this inspection. The walk-in cooler had an ambient temperature of 40*F at time of inspection and all food products in the walk-in cooler were below 40*F. The make-line unit had varying ambient temperature readings, one of the thermometers inside the unit read 41*F while the other was 45*F. Inspectors infrared thermometer measured 49*F in some areas inside the unit. PIC relocated all products at the make-line unit back to the walk-in cooler to rapidly cool. All products were later observed at 45*F and dropping. When re-stocking the make-line unit, PIC used ice bags to help keep food at 41*F or below and stated that they will check every hour until confident that the unit will hold temperature. Advised PIC to get unit serviced to ensure an ambient temperature of 41*F or below is maintained. TCS foods must be cold held at 41*F or below to prevent bacterial growth. Discussed the temperature danger zone (range between 41*F and 135*F) with PIC. Correct By: Corrected At Time Of Inspection
