-- Observed various cleaners and sanitizers stored on top shelf above items such as pizza baking pans, boxes of single-use wiping cloths, and cases of food prep gloves. No visible contamination observed. Reviewed approved chemical storage with the person in charge: toxic substances must be stored in a manner that prevents cross-contamination of food, equipment, utensils, linens, and single-service and single-use articles. The PIC stated the pizza racks on that particular shelf are not currently being used for the restaurant. Requested that the PIC rearrange items stored on shelf at the time of inspection. Corrective Action: Corrected at time of inspection.

Chlorine mechanical warewashing unit producing a strength of 0ppm after running several cycles and priming. Unit should operate properly, generating a cholrine strength of 50-100ppm for proper sanitation. Person in charge called maintenance, placed out of order sign on unit, and will manually wash rinse sanitize in 3-compartment sink until machine is operating properly. 4-501.15 - Core: Warewashing Machines, Manufacturers' Operating Instructions

Observed several areas throughout facility with a buildup of dust, grease and food residue; storage shelving, equipment, walls behind equipment, drains, prep tables with residue and debris build up on the edges and corners, etc. Person in charge stated they will be assigning deep cleaning tasks for all areas. 4-601.11(B) and (C) - Core: Equipment, Food-Contact Surfaces, Nonfood-Contact Surfaces, and Utensils Predefined Comment: Nonfood-contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Nonfood-contact surfaces shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
