Observed that no paper towels or other hand drying provisions were available at the handwashing sink next to the pizza prep line. All handwashing sinks must be fully stocked at all times. Observed cooked chicken wings in containers on the counter by the pizza prep line. The wings had an internal temperature of 56F, measured with a calibrated probe thermometer. All TCS foods must be held at 41F or below. The PIC stated the wings had been on the counter for less than 1 hour and were returned to the walk cold holding unit to reduce temperature.
