Inspector's notes
Observed tomato slices, cheese slices, grated cheese, and shredded cheese inside of a prep table top in the back of the kitchen all at 54°F. Further inspection of the prep table unit showed the prep table was not holding a consistent ambient temperature (left side was 54°F and right side was frosting over at 30°F). Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. PIC stated tomato slices and cheese were placed in the prep table less than an hour prior to inspection. PIC moved tomato slices and cheese to alternate reach-in fridge to rapidly cool and working prep fridge was used for all further preparation at time of inspection. Corrective Action: Corrected at time of inspection.
