Inspector's notes
Observed mechanical dishwasher dispensing chlorine sanitizer at a concentration of 0PPM at time of inspection. Food-contact surfaces must be properly sanitized after washing and rinsing. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. PIC stated that he will discontinue use of mechanical dishwasher and be working on repairs immediately following the inspection. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrective Action: Corrected at time of inspection.
