Observed sausage links in the back ktichen area at 55'F at the time of the inspection. Food employee stated sausages have been out for 2 hours. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Sausages were moved to the walk-in cooler at the time of the inspection.

Additionally observed no paper towels at handwashing sink in the men's bathroom or the women's bathroom in the dining area. Discussed with PIC the importance of keeping handwashing sinks adequately stocked so that proper handwashing can be done to prevent the spread of foodborne illness. Employee started restocking sinks at time of inspection. Corrective Action: Corrected at time of inspection.
