Per manager and per files submitted with ownership change (OC) application EHP2401034, the 3-compartment sink was moved to create space for the dishwasher in between the 3-compartment sink and the corresponding hand sink. Observed half and half in refrigerated dispenser have an internal temperature of 53°F at time of inspection. PIC stated machine was properly cold holding half and half yesterday but temperatures were not taken today. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed packaged raw bacon in tightly sealed in hard plastic container in walk-in refrigerator, stored directly on top of tightly sealed ready to eat foods in hard plastic. Person in charge removed bacon and placed on bottom shelf, away from ready to eat foods. 3-302.11 (A3-8) - Core: Packaged and Unpackaged Food-Separation, Packaging, and Segregation; General Food Protection. Observed the following violations from OC inspection on 11/20/2024: 1. All RPs must have drain cup that is plumbed to floor sink with 1 inch air gap above finished floor. 2. Have all RP backflow devices tested and certified by a licensed backflow specialist. Area manager to send certification via email and have maintenance adjust plumbing at all floor drains. 5-205.15 (B) - Core: System Maintained in Good Repair; Maintained Predefined Comment: Must repair all plumbing to a state of good repair prior to next routine inspection. Predefined Comment: All RO systems must have an approved reduced pressure zone assembly backflow device meeting ASSE 1013 standards installed upstream from RO system.
