PRIORITY VIOLATION-3-501.16(A)(2) and (B) - Priority: Time/Temperature Control for Safety Food, Cold Holding. Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per PIC, unit was at proper cold holding temperature within the last 4 hours. After investigation with PIC, it was found that the electric source to unit was not functioning. Electricity was restored to unit, and unit was blowing air temperature at 40*F at time of inspection. Recommend that internal food temperatures be routinely monitored (i.e. -every two hours) to assure TCS foods are kept at 41*F or below. Corrective Action: Corrected at time of inspection.
