Discussed with person-in-charge (PIC) replacing flexible piping for rigid PVC piping to ensure proper drainage. All plumbing must be maintained in good repair at all times. Discussed obtaining thermometers that read ambient air temperatures for all refrigeration units that store TCS food products. Also discussed obtaining a probe thermometer to check temperatures of TCS food products regularly. Also discussed ensuring all drain/discharge pipes are supplied with a one-inch air gap from end of pipe to top of floor drain. Also discussed ensuring disinfectant spray is not used for food-contact surfaces.Establishment observed to be using blue spirulina powder as food coloring. PIC expressed future interest in expanding list of additives to be used in establishment. Any substance(s) added to food must be GRAS (Generally Recognized as Safe) and/or used consistent with all legal requirements. The permit holder is responsible for ensuring that their menu items comply. Education was provided on the addition of food additives and dietary supplements during the inspection. Inspector's notes

Observed establishment uses chlorine as sanitizer, but does not have chlorine test strips onsite. Test strips are required for any sanitizers used with food contact surfaces. Provide chlorine sanitizer test strips prior to re-inspection. Also observed high-temperature dish machine in establishment. Per PIC, they have not used dish machine, and are not expecting to in the future. Discussed with PIC if they start to use dish machine, they must obtain a thermometer that measures ambient air/water temperature. Sanitizing using high temperature warewashing machines requires an irreversible measuring device to ensure food contact surfaces reach 160°F. Corrective Action: Correct prior to re-inspection.
