PIC will ensure establishment discontinues use of handwash sink for all activities that are not for handwashing. Facilities must be maintained in a condition that promotes handwashing. Inspector's notes

Observed carrot cakes with icing from reach-in cooler on front counter with internal temps of 50*F. PIC stated they had been inside for over 24 hours. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Discussed handwashing, ensuring hands are washed any time contamination occurs and when changing tasks. 2. Discussed date marking and including day of prep as day one. 3. Reviewed in-use utensils, ensuring all food contact surfaces stored at room temperature that handle TCS foods must be washed, rinsed, and sanitized when in use every 4 hours. 4. Discussed returning/discarding damaged cans. 5. Placing ambient air thermometers in all units that hold TCS food items. 6. Installing paper towel dispenser for back handsink. 7. Discussed cooling methods and parameters. 8. Discussed proper chicken handling. 9. Employee illness and cleaning up vomit and diarrhea incidents. **Guidance was provided via paper handouts and email.

#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed yogurt drinks in front beverage refrigerator with internal temperatures at 47*F. Ambient air temperature of unit was at a minimum of 47.3*F, via min/max thermometer. Per person-in-charge (PIC), yogurt drinks were placed in unit yesterday and internal temperatures had not been verified today. All TCS foods improperly cold held were discarded by PIC at time of inspection. Also observed miniature cakes in front refrigerated unit with an internal temperature at 46*F. Ambient air temperature of unit was at a minimum of 43.7*F. PIC indicated cakes were placed in unit within the past hour. PIC relocated cakes to walk-in refrigerator at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Establishment is observed to have adequate refrigeration onsite. Discussed with PIC repairing refrigerator prior to holding TCS food/beverages. Corrective Action: Corrected at time of inspection.
