Inspector's notes

Observed raw salmon and raw bacon stored over RTE foods such as garlic and lettuce in the reach in fridge in the back of kitchen. Also observed raw fish stored over RTE vegetable and raw salmon stored over RTE gallon of milk in the reach in fridges next to the cookline at the time of inspection. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.

Inspector's notes

At front prep table cooler, packaged raw chicken stored on top of container of cooked pork, and in two door reach in refrigerator, container of raw quail eggs and flat of raw shell eggs stored over ready to eat foods. Raw chicken and raw shell eggs were moved to bottom shelves to prevent future cross contamination. All raw animal proteins are to be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. Corrective Action: Corrected at time of inspection.
