Inspector's notes
Observed at the kitchen area a metal container with butter inside resting on the counter. Per PIC, that butter is under their 4 hour time as a control policy but an employee forgot to put a label earlier today. Per PIC, the butter was placed on the counter less than 3 hours ago. PIC put its proper sticker at time of inspection. Discussed with PIC the importance on keeping track of food items and documenting under the policy. Corrective Action: Corrected at time of inspection. All TCS foods being held under time as a control were properly time stamped at time of inspection.
