Inspector's notes
Observed salsa's being held under cold holding inside a cooler with ice at an internal temperature of 75*F. Internal temperature registered with an internal probe thermometer. Per PIC all salsas were placed inside cooler and placed outside greater than 4hrs at time of inspection. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Educated PIC that ice must be touching all sides of the container in order to adequately cold hold using ice. Corrected at time of inspection.
