Inspector's notes

At the three compartment sink, observed a worker washing and rinsing , but not sanitizing, wares including plastic containers, a metal grill press, and metal food pan. Food-contact surfaces must be properly sanitized after washing and rinsing. After advising PIC, the sink was filled with about an inch of sanitizer solution, which was not enough to submerge the wares in. She indicated that the unit did not have enough water. PIC will correctly complete the three step process of warewashing at the commissary after the event. Corrective Action: Corrected at time of inspection.

In steam table pans, observed stacks of cooked hamburger patties /118-132F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. After discussion with PIC, it was determined that the burgers were within safe time parameters and were to be reheated to 165F. Corrective Action: Corrected at time of inspection.

Observed operator step outside of mobile food unit for a period of time and come back inside, don new gloves, and proceed to make onion rings and french fries. Employees must wash hands immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles, after engaging in other activities that may contaminate the hands, and prior to engaging in food preparation. Operator discarded gloves, properly washed hands, and donned fresh gloves at time of inspection.
