Observed package of corn tortillas with obvious organic matter build up, stored for four days in fridge closest to unit door. All food must be in good condition, safe, and unadulterated. All adulterated food was discarded at time of inspection. PIC was instructed to buy from a store with fresher ingredients or be mindful of non-TCS portions kept on truck at any one time. Corrective Action: Corrected at time of inspection, food item was voluntarily embargoed.

Observed test strips used in chlorine bleach sanitizer bucket displaying a "black" color, indicating a solution concentration well over the 50-100 PPM requirement. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels to avoid chemical intoxication. PIC was educated on how to fill the sanitizer bucket for consistent sanitizer levels going forward. Corrective Action: Corrected at time of inspection.
