Observed unit parked and finished with service for the day cold holding shredded cheese, eggs, French fries, precooked chicken patties and cut tomatoes in refrigerator. Observed raw shrimp, raw chicken, raw beef, raw pork, and sour cream cold holding in coolers. Per PIC food was brought onto unit at 4am this morning. Informed PIC Time/temperature control for safety foods shall not be held over from a previous day's operation unless otherwise approved by the Department.
