Observed cooked chicken mixed with potatoes, corn, and peas in zip lock bags in ice chest with ice with an internal temperature of 50-58*F. Person in charge stated the chicken was cooked at 3am on the truck, cooled to room temperature then put in bags on ice. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. All TCS foods improperly cooled were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed cooked vegetable root and cooked beef with an internal temperature of 80-90*F in tin containers over chafing dish. Person in charge stated food items were cooked at 8:30am and are being hot held. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Discussed using time as a control with person in charge, PIC will discard food items at 1pm. Corrective Action: Corrected at time of inspection.

Observed TCS foods in zip lock bags improperly cold held in ice chests with ice. TCS food items include cooked pork, spinach, and cooked beans with an internal temperature of 48-49*F. PIC stated items were put in ice chest from refrigerator at 9am. Ice was not surrounding each bag of food. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. More ice was added to ice chest to rapidly cool TCS foods. Corrective Action: Corrected at time of inspection.

Establishment could not provide commissary log at time of inspection. Ensure commissary log is filled out accordingly and is available when operating. Corrective Action: Correct prior to next routine inspection. MCEHC Chap. 8, Sec. 3, Reg. 6d, 9d, 10e, 11d - Food preparation shall be simplified to reduce excessive steps where food may become contaminated. Excessive steps may include, but are not limited to, cooking overnight without oversight, cooling, or cutting large volumes of food items. This prohibition does not apply to foods that have been prepared or packaged in permanent food establishments or commissaries meeting the requirements of this code.
