Inspector's notes

Observed cooked shrimp (51) and raw shrimp (50) in mobile unit reporting above 41. PIC verified the items had been loaded into the truck within the past 3 hours from the supplier, at which time the food was verified to be in temperature. Food likely fell out of temperature during truck loaded at supplier. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were placed in functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Observed case of reduce oxygen packaged raw tuna fully thawed holding in reach in fridge. Packages were unopened and fully sealed. PIC confirmed they had been thawed in fridge in reduced oxygen packaging, stored thawed, and were loaded into the truck thawed. All ROP fish labeled "Keep Frozen" must be removed completely from reduced oxygen packaging (ROP) prior to thawing under refrigeration or immediately after thawing under cold running water.
