Nonfood-contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Observed cooked chicken 98*F-115*F in hot holding unit at the time of inspection. Also observed cooked shrimp and cabbage 100*F next to the hot holding unit on the counter. Per PIC, both TCS foods were cooked within the past 30 minutes. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. PIC was instructed to reheat TCS foods improperly hot held to 165°F at time of inspection. Corrective Action: Corrected at time of inspection.

Observed milk 55*F in prep table and cut cabbage 73*F in a container on top of prep table at the time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per PIC, TCS foods were taken from the reach in fridge less than 4 hours prior to inspection. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Ice cream vendors that only sell or dispense individually packaged, commercially processed items are exempt from providing a commissary agreement.
