Observed cooked chorizo, cooked pork and cooked beef with internal temperatures ranging from 90*F to 103*F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Food items were embargoed at time of inspection. Corrective Action: Corrected at time of inspection.

At time of inspection observed the operator operating above and beyond the scope of the Type I permit. Establishment is not selling prepackaged items as allowed in the Type I permit. Observed stem tables, house hold griddle and large pots storing salsa, cooked pork, cooked chorizo and cooked beef. At time of inspection observed the operator assembling open food. The operator had a menu on the vehicle with name of Tacos La Tia listing tacos, tamales, burritos, and tortas for sale. Observed the cooked chicken, cooked pork and cooked beef with an ambient temperature ranging from 90*F to 103*F. Food items were embargoed at time of inspection.
