Inspector's notes

Observed a rice cooker full of rice at 79 degrees. PIC explained the rice was cooked 3 hours ago and she forgot to plug in the rice cooker to keep the rice hot. Informed PIC, except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed gallon of milk sitting outside on top of a cooler temping at 60 degrees. Per PIC the gallon of milk was forgotten about and left on top of cooler since 2pm, greater that 2 hours earlier. Informed PIC all TCS foods improperly cold held were discarded by PIC at time of inspection. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.
