Inspector's notes

Observed various containers of rice, sauce, grilled peppers, cooked carne asada, and cooked chorizo being held at 80*F, both within a turned off steam table and in a container resting adjacent to the flat-top grill. Operator stated that the food was cooked at 9:30am, and was instructed to reheat the TCS food items to 165*F, and to turn on the steam table in order to hold the hot food items to 135*F. All TCS food items were reheated to 165*F and then held in a operational, and hot steam table to keep food at 135*F. Corrective Action: Corrected at the time of inspection.

Inspector's notes

Observed frozen cooked beans being thawed at room temperature near the bread across from the fridge unit and flat top grill. Operator stated they thaw at room temperature, and put it in the fridge once the ice is visibly thawed. Operator was then informed that the beans should be properly thawed within the fridge unit (<41*F) to ensure the food items are outside the danger zone (41*F - 135*F). Operator placed beans inside the fridge at the time of inspection. Corrective Action: Corrected at the time of inspection.

Observed defective grey water hook up leaking grey water from the 3-compartment sink onto the ground at the time of inspection. Per manager, they just noticed the defective hook up the morning of inspection and have already contacted/scheduled repair services for later the same afternoon. The mobile food establishment shall dispose of grey water in an approved sanitary manner. Corrective Action: Correct prior to re-inspection. *Reinspection will occur on, or before, Monday February 24th.

Observed a lack of access to restroom facilities within 200 feet of where the mobile food establishment was parked. Per manager, they utilize the restroom facilities at the TA fuel center roughly half mile down the road. The mobile food establishment shall have access to sanitary restroom facilities within 200 feet for their employees. Corrective Action: Correct prior to next routine inspection. MCEHC Chap. 8, Sec. 3, Reg. 5c - Mobile food establishments shall provide a commissary agreement to the Department upon request, at permit issuance or renewal, and as a part of the documents submitted during plan review for a new permit. Ice cream vendors that only sell or dispense individually packaged, commercially processed items are exempt from providing a commissary agreement. Addl Notes: At the time of inspection, the operator was not able to provide a commissary agreement to the inspector. The mobile food establishment shall provide a commissary agreement to a department representative upon request to show evidence of an up-to-date relationship with a commissary kitchen. Corrective Action: Correct prior to next routine inspection.
