MCEHC Chap. 8, Sec. 3, Reg. 5e - Mobile food establishments serving time/temperature control for safety foods shall maintain a log of visits to the approved commissary or food service establishment as required by this Department. This log shall be maintained using a Department approved format and maintained with the establishment at all times. The logs shall be maintained for a period of 30 days and should be available for review by the Department.

Observed no parasite destruction letter upon request for shrimp that is served raw (ceviche). Discussed with person in charge that parasite destruction records or letter from supplier are required for all non-exempt fish served raw or undercooked at establishment. Must provide parasite destruction letter from supplier prior to re-inspection. A re-inspection will occur with 10 days or no later than May 27th, 2025. Inspector's notes
Observed sliced tomatoes, raw shrimp and cooked shrimp with internal temperatures as measured using a probe thermometer ranging from 46°F to 54°F inside of a prep top unit refrigerator. A min-max thermometer was placed into the unit and allowed to stabilize for 10 minutes. The ambient air temperature inside the unit was 38°F. In discussion with the person in charge, they stated that it takes time for the units to begin cooling down once they arrive to the location and turn on the generator for the food trailer. Discussed with person in charge that the units should be pre-chilled and holding at 41°F or below prior to putting food into the unit and traveling to the operating address. Discussed with person in charge to place time and temperature controlled for safety foods on ice inside of the units to help maintain temperature if cold holding temperatures remain an issue. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Observed no sanitizer testing strips available for the sanitizer. Inspector used personal test strips to verify that the sanitizer was at the appropriate concentration of between 50-100 parts per million for the chlorine sanitizer. Discussed with person in charge that test strips are required for any sanitizers used with food contact surfaces. Provide sanitizer test strips prior to re-inspection. A re-inspection will occur within 10 days or no later than May 27th, 2025. Corrective Action: Correct prior to re-inspection.
