Inspector's notes

Observed 2 large containers of cooked carne asada in reach in Fridge at 51 degrees Fahrenheit. When asked when food was prepared and it it had been taken out at any point, operator explained they had cooked it on the unit roughly 2 hours prior, and then placed it in refrigerator to cool. Per MCEHC, food preparation shall be simplified to reduce excessive steps where food may become contaminated, including but are not limited to, cooking overnight without oversight, cooling, or cutting large volumes of food items. Being that food was within cooling parameters and had only been cooling for less than 4 hours, PIC was asked to cease cooling in the future and reheat as much of the carne asada as possible. Corrective Action: Corrected at time of inspection. This is a second repeat violation.
