Observed hot-holding items such as beans and salsas being stored in metal serving pans without coverings and not in an enclosure. Food must be protected by storing in covered containers. PIC placed lids over food items to satisfy requirement. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed items in coolers being stored on top of ice such as shredded lettuce at 48°F and pico at 65°F, as well as red salsa at 70°F and green salsa at 68°F in customer self serve cold-holding on unit. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. PIC added ice to coolers and items rapidly cooled to required temperature in addition to moving some in temperature items to fridge on unit and adding ice to customer self-serve area. PIC also educated on option to use Time as a Public Health Control for short events in the future. Corrective Action: Corrected at time of inspection.
