Chopped romaine, pico de gallo, and cream based salad dressing in metal pan in sitting on a bed of ice, with the ice touching only the bottom of bin. Foods had an internal temperature of 52-57*F. Person in charge mentioned foods had an internal temperature of 41*F within 2hrs prior to inspection. All cold temperature controlled foods should be held at 41*F or below.
