The person in charge stated the bakery section is operated by a separate independent party that utilizes the shared space in the establishment but is not an employee and the establishment does not manage or oversee the bakery section. The person in charge stated baked goods are produced for retail sale within the establishment and for wholesale to outside businesses. Discussed a permit to operate is required and provided permitting resource information.

Observed cactus dish with cut tomatoes and a macaroni salad dish with internal temperatures of 59 degrees Fahrenheit in the buffet style cooler on the main service line. Unit had an ambient temperature of 60 degrees Fahrenheit at time of inspection. Per person in charge the items were prepared at 8:00am from cold ingredients and then placed out in the refrigeration unit.
