Establishment must protect food from contamination by adding coverings to food containers. Discussed cross contamination concerns with Person in Charge (PIC). Observed container of hermetically sealed pork ribs thawing in standing water underneath food prep sink. Per PIC, pork ribs had been thawing for 30 minutes. All foods being thawed from frozen must be thawed in an approved manner. Foods must be thawed under refrigeration, under cold running water, or as part of the cooking process. PIC placed pork ribs underneath cold running water inside prep sink. Corrective Action: Corrected at time of inspection.

Observed raw ginger and vegetables being stored directly under raw beef and raw shrimp in the walk in refrigeration unit towards back of establishment. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrected at time of inspection.

Observed small brown insects underneath dishwashing equipment, hand washing sink and residing in cracks along the sides of the walls throughout establishment. Establishment had pest control most recently performed 10/31/2024. Establishment must be maintained free of pests and all pest control measures must be conducted by a licensed pest control specialist. Must eliminate current pest control problem and obtain pest control from a certified and licensed pest control specialist by re-inspection. Correct prior to re-inspection. Reinspection scheduled for 12/10/24.
