Observed sanitizer bucket on counter behind front register with wiping cloth in quaternary sanitizer with concentration below manufacturer specifications. Per person in charge (PIC), sanitizer bucket left on counter from night shift day prior to inspection. All wet wiping cloths shall be stored in sanitizer buckets with approved sanitizer concentrations. Wiping cloth was placed in sanitizer bucket with approved sanitizer concentrations at time of inspection. Discussed approved sanitizer concentrations with wiping clothes. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed 46°F internal temperature of shredded cheese, shredded chicken, steak, bacon, salami, and pepperoni inside top portion of prep cooler across from bread oven. Per person in charge (PIC), prep cooler lid was propped open for 45 minutes. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.
