Inspector's notes
Observed the walk-in cooler with an ambient air temperature of 46.9*F, measure using min/max thermometer. The temperatures of the TCS foods stored inside were 45-46*F. The TCS products included are gallons and half gallons of whole milk, 2% milk, low fat milk, fat free milk, and chocolate milk, almond milk, oatmilk, lactose free 2% and chocolate milk, whipped cream, half and half, cheese and meat stick snacks, a variety of string cheese, variety of shredded cheese, deli turkey meat, deli ham, butter, cream cheese, meat and cheese lunchables, sour cream, hot dogs, eggs, and meat and cheese snack plates. PIC informed that the ambient temperature of the fridge was taken about 8 hours prior. Informed PIC that because it is unknown how long the product has been out of temperature; it needs to be discarded for safety purposes. PIC discarded all improperly cold held product at time of inspection. All TCS products were embargoed. Informed PIC that the walk-in may not be used to store any TCS products until it is capable of holding them at 41*F or below. PIC agreed to not use walk-in until it is fixed. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed absorbent white pads covering the floor below the dairy in the reach in cooler. The pads appear used and stuck to the floor. Informed PIC that the premises should be maintained so that they are smooth and easily cleanable. Discussed monitoring and maintaining the pads' cleanliness. All floors, walls, and ceilings must be maintained and repaired such that it is smooth and easily cleanable. Repair physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.
