Per Executive Chef the employee lounge is no longer being used to cook or hold any TCS foods. They have a micro market (separately permitted) to supply food to employees. There is only a soda fountain in the space that is still being utilized. Permit will be downgraded to a class 2. PIC understands that if food preparation or holding of TCS foods resumes then this may potentially require an increase in permit class.Additionally, PIC requested that establishment be removed from Cutting Edge program.
