Inspector's notes

Observed various cheese items and butter items (44-48'F) in tabletop prep cooler located closest to walk-in unit. Ambient temperature of unit measured at 38.0'F but tabletop compartment of unit is known to not function optimally, per PIC. PIC stated food items in question have been placed in the unit for less than 4 hours. PIC moved all food items in question to alternative refrigeration to be rapidly cooled to 41'F, at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. 2ND CONSECUTIVE VIOLATION. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed various dairy butter items (44-48'F) in tabletop prep cooler located opposite of handwashing station located closest to walk-in unit. Ambient temperature of unit measured at 46.0'F. PIC stated food items in question have been stored in prep cooler for longer than 4 hours. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. PIC put in a work order at time of inspection and technician arrived on-site at time of inspection. PIC agreed to not use unit in question until it has been fixed. Establishment observed with more than adequate coldholding capacities. Corrective Action: Corrected at time of inspection.

PIC & staff moved containers and removed lids and plastic wrap to correct during the inspection. Carnitas was within parameters for proper cooling times and temperatures.
