Observed missing caulk and caulk in disrepair at the hood in the prep area over the rethermalizer and oven. The red caulk is hanging down from the stainless steel junctures of the hood. Discussed recaulking the hood with heat resistant silver silicon. Equipment that is stationary (not easily moved) and subject to moisture must be sealed and maintained to prevent pathogen growth and the harborage of insects and rodents. Corrective Action: Correct prior to next routine inspection.

Notified Person In Charge (PIC); PIC confirmed temperature; per PIC the salads were placed into the unit an hour prior to inspection start time 11am. Time of inspection is at 1:00pm. PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. The Quaternary ammonium (Quat) solution in the 3-compartment sink of the bar area measured under 150ppm via test strips as it was being used. The person in charge (PIC) verified concentrations using establishments test strips. Per PIC was able to fix the sanitizer pump dispenser at the time of inspection. The PIC was able to resolve the issue and correct sanitizer concentration was achieved at the time of inspection. The PIC instructed the employee to re-sanitize all dishes washed within the last hour. Please check Quat sanitizing solution for food contact surfaces throughout the day to ensure a concentrations 150-400ppm is maintained. Correct By: Corrected At Time Of Inspection
Core-3-304.14, C: Wiping Cloths, Use Limitation...The Quaternary Ammonia (Quat) sanitizing solution of the wiping cloths in the kitchen all measured under 150ppm via test strips. The person in charge (PIC) stated the sanitizer dispenser gallon was low. The PIC emptied all the sanitizer buckets and refilled them with the correct sanitizing concentration.
