Inspector's notes
Observed various temperature control for safety items such as bacon, smoothies, and dairy products in the cooler. Observed automatic-closing mechanism not working. PIC stated these items had been inside the cooler since the shipment on Monday. These items were voluntarily discarded - see embargo list for details. Ambient temperature of unit measured 53*F at time of inspection. Discussed cold holding requirements, instructed PIC to discontinue use of unit for TCS foods until in good repair. Alternative refrigeration is available to operate safely. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Repeat Violation: Second Consecutive Corrective Action: Corrected at time of inspection.

Observed the second from the left dairy cooler with an internal ambient temperature of 59*F measured with a min/max thermometer. Observed the strawberry /banana naked juice and the green machine naked juice with an internal temperature of 58*F measured with a probing thermometer. Embargoed the items and the person in charge (PIC) voluntarily discarded at time of inspections. Discussed with PIC to utilize other adequate refrigeration until unit is holding at 41*F or less. Also discussed with PIC Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
