#48 — Warewashing Facilities, Installed, Maintained, Used, Test StripsCore4-301.12

Inspector's notes

At the three compartment sink, observed the wash sink filled with soapy water and wares. The third sink contained a small red sanitizer bucket filled with less than 2 inches of sanitizer. When questioned, food service worker indicated that the red sani bucket is used as the third sanitizer sink because the sink lacks a drain plug. A large tote was provided and filled with sanitizer to act as the third vat at the sink. The PIC indicated that the drain plug for the sink would be repaired.
