Inspector's notes

In prep cooler/49.6F, observed TCS food holding over 41F including cous cous/50F, lentils/50F, feta/46F, chicken salad/49F, cut leafy greens/54F, etc. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.All TCS foods were within safe holding parameters (two hours) and held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Staff to use ice baths and other working equipment until this unit is repaired/replaced. Corrective Action: Corrected at time of inspection.

In garde manger cooler, observed thawed ahi in vacuum packaged labeled to open frozen package to thaw. All ROP fish labeled "Keep Frozen" must be removed completely from reduced oxygen packaging (ROP) prior to thawing under refrigeration or immediately after thawing under cold running water. PIC instructed. Corrective Action: Correct prior to next routine inspection.

A pan of tomatoes was in the unit. Also observed no handwashing station available near the smoker. Obtain approval from MCESD Plan Review and Construction section prior to conducting outdoor cooking by submitting an application and plans as needed. Please submit an application, supporting documentation, and fees within 5 business days or legal action may result pursuant to MCEHC Chapter 1, Regulation 4(e).
