PRIORITY VIOLATION-3-501.16(A)(2) and (B) - Priority: Time/Temperature Control for Safety Food, Cold Holding. Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per PIC, TCS foods in unit have not been monitored for internal temperature for more than 4 hours. Predefined Comment: All TCS foods improperly cold held were removed from unit and placed in bin to be discarded by PIC at time of inspection (see embargo sheet). Do not use unit to house TCS foods for cold holding until unit can maintain foods at an internal temperature of 41*F or below. Corrective Action: Corrected at time of inspection.

Numerous commercially processed, wrapped sandwiches have date marks labels identifying the shelf life of a different product. • TCS food prepared and packaged by a Food Processing Plant that does not meet the criteria to be exempted must be clearly marked at the time the original container is opened and is held for >24 hours to indicate date/day the food shall be consumed on premises, sold, or discarded. o The day the original package is opened counts as Day 1 o The day or date marked by the operation may not exceed the mfg.’s use-by date Per PIC, sandwiches were recently placed out on sales floor by new employees, which used the incorrect date labels.
