Explained to PIC that everyone working with food needs to have a Food Handlers Card and additionally, at least one person with a Food Protection Manager Certificate needs to be on the premises during all hours of operation. Inspector's notes

Observed multiple food items in the walk-in fridge and other reach in coolers past the seven-day date mark. The food items to be disposed include whipped butter (7/16), hollandaise sauce (7/22), egg salad (7/23), tuna salad (7/23). Food items were embargoed, and PIC disposed of them. Discussed checking the fridges on a schedule to look for out of date items with PIC. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed a build-up of dirt and debris on the kitchen vents and surrounding ceiling panels. Observed food and other debris underneath ware washing equipment and other cooking equipment. Informed PIC that these areas need to be cleaned and continue to be cleaned at the frequency which prevents the accumulation of dirt, organic matter, and food debris. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection. Bacon and green lettuce were using time as temperature but no time log available for verification at the line. Per staff and GM, the meter machine had ran out of battery and was not functioning at the time. Inspector coached to have an alternate method to record time in an event like this occurs.
