Observed grayish/pink organic matter on ice deflector in ice machine. Food contact surfaces are to be cleaned at regular intervals to prevent build up of food and other debris. Corrective Action: Correct prior to next routine inspection. PRIORITY VIOLATION-4-501.114 (F1-2) - Priority: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- On-site Generation. Addl Notes: Observed no sanitizer solution at dish wash machine. Upon further investigation it appears that the tubing for sanitizer became cracked. Person on charge contacted repair company for repair. Chlorine based sanitizer to be at 50 ppm. Glassware from bar will be manually sanitized at three compartment sink until dish wash machine is repaired. Advised staff to verify sanitizer levels using test strips. Email or text invoice of repair and test results with sanitizer at 50 ppm chlorine level on or before Monday, Dec 13, 2024. Corrective Action: Correct prior to re-inspection.

Observed taco meat at steam table at 130*F. As per the kitchen staff was heated and placed on warmer at noon. Hot hold of food to be 135*F or greater. Steam table temperature was increased and taco meat was reheated to 165*F and returned to steam table. Advised staff to monitor using a metal stem thermometer. Core-4-501.12, C: Cutting Surfaces Observed that the 2 nylon cutting boards have significant cut marks and cannot be properly cleaned. Cutting surfaces must be in good repair and maintained clean. Replace scratched or scored cutting surfaces are prevalent, which are not in good repair or easily cleanable. The PIC stated they would replace the boards and ensure that the existing boards are well cleaned and sanitized when in use until replacements are received.
