Observed pizza sauce (53°F) and pizza by the slice sitting on the counter without a time indicated. Staff stated the pizza sauce and pizza by the slice had been placed on the counter within the last hour. All TCS foods being held under time as a control were properly time stamped at time of inspection. Discussed the importance of documenting time when foods are placed on time control. Corrective Action: Corrected at time of inspection.

Observed marinara in walk in cooler at 45-47*F. As per the person in charge the marinara was cooked the night before and cooled in the walk in cooler overnight. Marinara was more than 2 inches deep and covered. Cold hold of food to be 41*F or lower. Advised the employees to verify that food has cooled to 41*F prior to covering and to check temperatures of items that may have cooled overnight. Marinara was embargoed and discarded. Corrective Action: Corrected at time of inspection.
