PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Various milks, cheeses, deli turkey, shredded salad mix, etc. in reach in refrigerator with an internal temperature of 46-53*F. Observed various milks, American cheese, mayo, and deli turkey on counter top with an internal temperature of 51-71*F Person in charge mentioned foods were placed in the unit over 4hrs prior to inspection. Various milks are held above 41*F (in and out of the refrigerator) for a total about 6 hours without temperature control. Mayo was removed from temperature control within 2 hours of inspection, was placed back in unit, and showed reduction in temperature of 48*F. American cheese and turkey were on the counter for an unspecified amount of time and was voluntarily discarded. All cold temperature controlled foods should be held at 41*F or below. Person in charge placed sign on shelf in unit to indicate foods on shelf are for discard. Recommended checking temperature before utilizing refrigeration units, keeping foods on ice during prep/service, and placing foods in refrigerators in between tasks.
