Observed several heavily scored cutting boards on the clean dish shelving. All cutting boards should be kept in a condition in which they are smooth and easily cleanable. Once they are heavily scored they no longer are smooth and easily cleanable. Please have cutting boards resurfaced or replaced. Corrective Action: Correct prior to next routine inspection.
