Inspector's notes

In the walk-in cooler observed all TCS foods holding between 53*F and 61*F. Foods included: american cheese, provolone cheese, pepper jack cheese, shredded cheese, pepperoni, salami, turkey, ham, roast beef, chicken, bacon, steak, lettuce, and meatballs. All foods had been in the unit since the day prior. No temperatures had been taken within the last 4 hours. No evidence was available to prove that the fridge or food had been under 41*F within the last 4 hours. All TCS foods were embargoed, see embargo list on page 3.

Inspector's notes

At time of inspection the walk-in cooler was holding at 57*F on the inspector's min/max thermometer. Walk-in cooler was in use with TCS foods. All coolers used for TCS foods must be kept at or below 41*F. Prior to leaving, a technician was on-site trying to repair the unit. Inspector will follow up within 24 hours to ensure that the unit is repaired. Establishment is able to operate safely with the refrigeration units that are currently working.

Observed meatballs in sauce between 105-125*F. The meatballs were 105*F and the sauce was 125*F. Per manager the meatballs in sauce were reheated and placed in hot holding 1.25 hours prior. Foods were reheated to 165*F and placed back into hot holding. Corrective Action: Corrected at time of inspection.
