Observed ventilation hood had an accumulation of grease and debris. Intake and exhaust air ducts in ventilation hood should be cleaned frequently so they are not a source of contamination by dust, dirt, grease and other materials. Please clean and maintain. Observed prep refrigerator referred to as "vegetable fridge" measuring with an ambient temperature of 51 degrees F. Items such as cooked beef and chicken, cooked noodles and leafy greens measured with internal temperatures ranging between 49-56 degrees F. These items had been stored in the prep refrigerator for less than 2 hours and were moved to alternative refrigeration. Discussed TCS vegetables and cold holding. Alternative adequate refrigeration available to operate safely. This prep refrigerator will not be used to store TCS food items until in good repair and able to maintain temperatures at or below 41 degrees F. 2nd consecutive violation Correct By: Corrected At Time Of Inspection

These items included raw chicken, cooked chicken, egg rolls, and crab wontons. Per PIC Items had been in coolers since previous day, PIC moved all items to other coolers to cool back down to 41*F. Discussed with PIC that Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less. Technician arrived on site at time of inspection, walk-in was repaired during inspection and reading below 41*F. Correct By: Corrected At Time Of Inspection
